Aubergine lasagna is the best way to describe this, it's a mushroom ragu as tomato sauce, sauteed or fried aubergine instead of pasta, and a ricotta / mozzarella mix as white sauce, and parmesan on top

before the oven:

and after, it was very nice:

It was possibly one of best foods I have ever eaten!!! Really amazing!!

Today’s pesto, no pine nuts at home so made with pecan nuts, supermarket parmesan instead of pecorino, but pulled it off using  a healthy amount of garlic and some freshly ground pepper

Washing it down now with some chilled white wine sitting outside

Oh I could do with that now. You’re food pics are excellent.

Lazily after my accidentally longer than expected ride (after the gym dont you know?) I’m only fit for chucking scampi n chips in the oven! My husbands busy sharing some pretty fine whisky so I may go quiet very soon ?

Dave !!!  how can you possibly not like mushrooms ?

They're just a slimey fungus thing, more texture than anything else.
Bit like my misses with bananas.

I have a feeling it’ll always be bikes with a side order of savage ego bursting banter ?

Definitely not a British version- some spaghetti swimming in a bright orangey red sauce!

How it looked before the pasta
